Tye Tilt and Scotty Button took awards for the Best Savory Pie in the 2009 Best Pie in the Tetons contest. Creamy and delicious.
1 pound oyster mushrooms, slices
1/2 pound black morel mushrooms, sliced
1 cup dried shiitake mushrooms
1/2 cup fresh
1/3 cup butter
1 medium onion
1 tablespoon flour
1/2 cup cream
2 tablespoons sherry or cognac
salt and fresh ground pepper to taste
Pastry for a 2-crust 8-inch pie
Soak shiitakes for 15 minutes. Clean morels of debris. In a large skillet saute the onions in butter and add mushrooms and cook about 10 minutes. Stir in the cognac, salt and pepper. Add the cream and cook until it starts to thicken. Let the mixture cool while you prepare the crust.
Pour mixture into the crust and prepare a lattice top or other decorative design (can even cut pastry into shapes and place on top. Bake for 20-30 minutes until crust is browned.
