I’m always try to add some whole wheat flour and adjust the sugar in our favorite cookie recipes. This adjustment was a winner. We served these at Mareila’s school the day I had to do the health and nutrition talk. The kids all asked for the recipe!
1 cup white flour
½ cup whole-wheat flour
½ teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
Mix dry ingredients well sift or stir
¾ cup butter- softened
½ cup white sugar
½ cup brown sugar
Cream butter and sugar in a mixer. Add
1 egg
1 teaspoon vanilla
1 cup softened banana
Add flour mixture to the creamed mixture, and then add
1 ¾ cups Oats
1 cup chocolate (white chocolate or butterscotch) chips
These can be baked as drop cookies or as bars in a 13×9” pan. 8-10 minutes for drop cookies, 20-30 minutes for bars. Don’t overcook or they will get dry.
