Cheesy Grits with Eggs- Poppy's Specialty

The pattern we have fallen into is a breakfast together is Christian’s job and he has mastered a few favorite breakfast dishes. The top 3 are Cottage Cheese Pancakes, Breakfast Bounty Granola and Cheesy Grits. Cheap and easy, warm and satisfying, and a little protein to get us all through the morning.

Cheesy Grits with Eggs
Serves 4

2 1/4 cups water
1/2 cup grits (white hominy, in the oatmeal section of the grocery)
1 tsp butter
1/2-1 cup of any kind of cheese
(cream cheese is Mariela’s favorite, I’m a fan of cheddar and Parmesan)
dash of salt
garlic powder- optional
4-8 fried or poached eggs, over easy

In a small saucepan boil the salted water. Add the grits and butter after it is boiling and turn to low. Stir well and often until grits are soft- approximately 5-8 minutes. Add the grated cheese and stir. Divide grits between four bowls and spoon egg over. So yummy if the yolks are still runny and I love mine with 2009 “Bon Appetit Ingredient of the Year- Syracha Garlic Hot Sauce.”
