Entered in the 2009 Best Pie in the Tetons Contest this pie was a big hit with a lovely lattice crust and tart rhubarb.
Filling:
4 cups rhubarb, chopped from her garden
1/2 cup of honey from Blue Flax Farm
3 tablespoons flour
2 tablespoons lemon juice
lemon zest
1/2 teaspoon cinnamon
1 teaspoon ginger
Crust: enough for one pie with lattice crust
1/2 cups of butter from Cosmic Apple Gardens
1 cup flour
4 tablespoons of rice milk
